Cocktail Meatballs


Ingredients

  • 1 lb. ground beef (lean)
  • ½ cup bread crumbs
  • 2 tbsp. water
  • 1 tbsp. sugar (brown)
  • 3 tbsp. onion (minced)
  • 1 egg (large)
  • ½ cup sweet chili sauce
  • 2 tbsp. lemon juice
  • 1 8-ounce can cranberry sauce
  • 6 honey ham slices (optional)

Directions

  • Preheat your oven to 350°F.
  • In a bowl, mix the ground beef, bread crumbs, water, onion, and egg until blended. Form into 1-inch meatballs and place on greased baking sheets. Bake for 20 minutes or so, turning once. Set aside.
  • In a saucepan, stir in the chili sauce, lemon juice, sugar, and cranberry sauce over low heat for 10 minutes or until smooth.
  • Add in your meatballs and simmer for 45 minutes or until the sauce is thickened and glazed. If you're looking to add a bit of smokey goodness to your dish, wrap each meatball in a honey ham slice before adding it to the sauce.
  • Serve warm or at room temperature on toothpicks with extra sauce if desired. Enjoy!

 

Irish-Style Nachos 


Ingredients

  • 3/4 cup corned beef, chopped roughly
  • 1 cup cheddar cheese (we like sharp but use your favorite)
  • 1 lb. potatoes, sliced thinly
  • 1/3 cup of vegetable oil (with an additional tbsp. to toss the potatoes with)
  • Salt
  • 1/2 cup cilantro
  • 1 pepper, seeded (go with a Scotch bonnet pepper if you want a bit of heat, but a jalapeño still works)
  • 1 tbsp. vinegar (white vinegar works well, but we recommend white wine vinegar for an extra zing)

Directions

  • Preheat your oven to 450°F.
  • Toss the potatoes in 1 tablespoon of vegetable oil and a pinch of salt. Bake for 20 minutes then turn them over and bake for an additional 20 minutes.
  • Using a food processor, pulse together the cilantro and pepper. Add the vinegar and oil and pulse until you get a pesto-like consistency. Set aside.
  • Once your potatoes are done, layer them with your chopped corned beef and cheese in a baking dish. Bake for 10 minutes or so, making sure the cheese is fully melted.
  • Drizzle the cilantro sauce over the top and add a sprinkle of salt before serving.

 

Waffle Fry Turkey Sliders


Ingredients

  • 1/4 lb. turkey, sliced (honey-roasted or oven-roasted turkey all work great)
  • 1 package bacon
  • 1 package waffle fries, thawed
  • 1/4 lb. cheddar cheese
  • 3 tomatoes, sliced
  • Slider buns

Directions

  • Fry up the bacon in a skillet until it is crispy. Set aside.
  • Fry the waffle fries in the same skillet until golden brown and crispy.
  • On a baking sheet, layer the waffle fries, turkey strips, bacon, tomatoes, and cheese. Bake in the oven for 10-12 minutes.
  • Serve on slider buns with your favorite condiments and there you have it—one of the easiest and tastiest New Year's Eve appetizers you'll ever make!

 

Creamy Pastrami Party Dip


Ingredients

  • ½ lb. pastrami (corned beef also works)
  • 2 tbsp. mayonnaise
  • 1 cup cream cheese
  • 6 onions
  • 1 tbsp. lemon juice
  • Garlic salt
  • Horseradish sauce (optional)

Directions

  • Using a food processor, pulse the pastrami with the onions until it is finely chopped.
  • In a bowl, mix the mayo and cream cheese until blended. Add in the pastrami mixture and lemon juice, stirring until all the ingredients are blended nicely.
  • Adjust seasoning with garlic salt and horseradish sauce if desired.
  • Cover the bowl and refrigerate for a few hours to give the flavors a chance to mingle.
  • To serve, simply spoon the dip into a bowl and enjoy with your favorite chips or crackers. For a more substantial snack, serve with slices of pumpernickel, rye bread, beef jerky, or sausages. Enjoy!

Ingredients

  • 2 packages (2 oz. each) Buddig Sliced Beef or Ham
  • 1 package (8 oz.) cream cheese, softened
  • 1 tsp. horseradish
  • 1 tbsp. onion, grated
  • Worcestershire sauce, to taste

Directions

  • In a medium bowl, mix the cream cheese, horseradish, onion, and Worcestershire sauce together until blended.

  • Spread the cream cheese mixture onto the meat slices, leaving a small border around the edges.
  • Roll up tight like a burrito, using a toothpick to secure the ends.

  • Cover and refrigerate for at least 2 hours. Once chilled, slice into 1" pinwheels and serve with your favorite crackers or bread for an easy and delicious New Year's Eve appetizer!
