You know what the literal secret ingredient is for a satisfying but guilt-free snacking? Lunch meats!

Adding deli meats to your munchies is a great way to make them interesting without having to turn to carb-loading options. Slices of ham or turkey slices can instantly liven up a rather dull salad. Lucky for you, we’ve got just what you need: low-carb snack recipes to fill you up and slim you down!

Low Carb Lettuce Wrap

Ingredients:
  • 2 Slices of Buddig Ham
  • 3 Slices of Buddig Turkey Breast
  • 8 Iceberg lettuce
  • 1 tbsp homemade mayo
  • 1 tsp yellow mustard
  • 5 slices of cucumber
  • 8 cherry tomatoes, cut in half

Directions:
  1. Line a tray with a sheet of parchment paper. Place 5-8 lettuce leaves on the tray, side by side, with their edges on top of another so there’s no space between them. 
  2. Spread mayo and mustard on top of each lettuce leaf. 
  3. Next, add slices of ham and turkey breast, cherry tomatoes, and cucumber.
  4. Roll the lettuce wraps as tightly as possible using parchment paper. When you’re halfway through, fold the sides inwards, over the filling. Continue rolling until everything is completely wrapped like a burrito.
  5. Slice the wrap in two for easier consumption and enjoy一as soon as possible!

Quick tip: You can use romaine, butter, or Boston lettuce as an alternative to iceberg lettuce. In fact, any green leaf works, too! And don’t forget to dry your leaves completely after washing them to keep them from getting soggy.

 

Brussel Sprout Salad

Ingredients:
  • 2 pounds fresh Brussels sprouts, thinly sliced
  • 3 tbsp. canola oil
  • 1 large finely chopped onion
  • 7 thin slices of Buddig deli ham, cut into strips
  • 4 cloves of garlic, crushed or minced
  • ½ tsp pepper
  • ¼ tsp salt
  • ⅔ cup plus 3 tablespoons Parmesan cheese, grated

Directions:
  1. Put 8 cups of water in a pot and bring it to a boil. Add in your Brussels sprouts, leaving them to cook for 3-4 minutes until they’re tender. 
  2. Once the brussel sprouts are cooked, drain the water.
  3. Heat oil in a large skillet pan, over medium-high heat. Add the chopped onion and Budig ham slices. Cook for 5-6 minutes or until the onion has started to caramelize.  
  4. Add garlic and cook for one more minute. 
  5. Add the Brussels sprouts, and then salt and pepper.
  6. Pour in ⅔ cup cheese. Keep stirring.
  7. Sprinkle with the remaining cheese and get ready to gobble up!

Ham and Cheese Crisps


Ingredients:
  • ½ cup ham, finely diced
  • ½ cup grated parmesan cheese
  • ½ cup mayonnaise
  • 1 tbsp mustard
  • 1 tsp low-carb sweetener

Directions:
  1. Preheat your oven to 350°F.
  2. Mix diced deli ham with grated Parmesan cheese in a mixing bowl.
  3. Take a spoonful of the mixture and form small, flat rounds on a baking sheet lined with parchment paper or a silicone mat.
  4. Bake the rounds for 12 minutes, or until they are crisp on the edges and golden brown in color.
  5. While the chips are baking, mix together mayonnaise, mustard, and a low-carb sweetener of your choice to create a dipping sauce. 
  6. Serve immediately for optimal crunch!

This recipe should yield around 20 chips and half a cup of dip.

Quick tip: For best results, use a block of Parmesan cheese (instead of the pre-grated one) and grate it manually. This will ensure that the cheese is fresh and without any added ingredients that may affect its melting properties.

 

Ham and Avocado Scramble with Cheese

Ingredients:
  • 4 eggs 
  • 2 Tbsp. milk 
  • Salt and pepper to taste 
  • 1 slice Buddig ham 
  • 1 thick slice Swiss cheese 
  • ½ avocado

Directions:
  1. In a bowl, beat eggs with the milk. Add salt and pepper to taste.  
  2. Chop the Buddig Ham, Swiss cheese, and avocado into ½-inch squares.
  3. Place a nonstick skillet over medium-low heat. Wait until it’s hot, then spray with nonstick oil.
  4. Add the egg mixture and cook. Keep stirring until eggs are almost done but don’t overcook. They should still be a bit runny.  
  5. Quickly add the ham, avocado, and cheese, and cook until the cheese is melted and the eggs are completely cooked through
