Denver Omelette Cups Recipe
Ingredients
2 oz Buddig Original or Premium Deli Smoked Ham
1 oz green bell pepper (1/4"" dice)
1 oz onion (1/4"" dice)
6 oz stuffing mix (1 box) or 1 lb leftover stuffing
5 eggs or 1 cup egg substitute
2 oz milk
1 tbsp butter or 1 tbsp margarine
4 oz cheddar cheese
salt to taste
pepper to taste

Directions:
Preheat oven to 350 degrees.
Grease a twelve section muffin tin.
If original stuffing was made without eggs, mix with one egg to act as a binder. If using Stove Top stuffing, follow instructions and ingredients on box to prepare, also add an egg if not inculded in instructions.
Divide stuffing into twelve portions and mold into cups in muffin tin, bake in oven for 12-15 minutes or until golden.
Melt butter in sauté pan on medium heat (do not burn).
While butter is melting, beat 4 eggs (or egg substitute) and milk in a mixing bowl.
Add beaten egg mixture to sauté pan and scramble until eggs are set, but not dry. Season with salt and pepper to taste.
Add Buddig Original or Premium Deli Ham to stuffing cups (whole or sliced, your preference).
Top stuffing cups with scrambled egg and top with cheese.
Bake in oven for 5 - 7 minutes or until cheese is melted.
Gently remove from muffin tin.
Serve!
