Skinny Waldorf Chicken Salad Wrap

Ingredients

  • 8 oz Buddig Original or Premium Deli Rotisserie Chicken Breast
  • 4 large lettuce leaves
  • 1/2 cup walnuts - slightly toasted and chopped
  • 1/2 cup celery - thinly sliced
  • 1/2 cup red seedless grapes - sliced
  • 1 sweet apple - cored and chopped
  • 3 Tbsp low fat plain yogurt
  • 1 Tbsp fresh lemon juice
  • 2 oz blue cheese - crumbled
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 4 Spinach tortilla wraps - 10"

Directions:

  • In a medium sized bowl, whisk together the yogurt, bleu cheese and the lemon juice.
  • Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper.
  • Mix in the apple, celery, grapes, and walnuts, divide into four portions.
  • Place 2oz of Original or Deli Cuts Chicken in the middle of tortilla, place lettuce leaf on top of meat, and mound a portion of salad into lettuce leaf.
  • Fold bottom portion of tortilla wrap over the salad, fold in the sides and roll like a buritto.
  • Slice wrap on the bias and serve.
